Hand-harvested at dawn and placed in crates, the grapes are then stored in a cold room for 24 hours.

The berries are sorted on a sorting table before being sent to the press.

We use cold skin maceration and age the wine in concrete eggs.

Fermentation occurs naturally, driven by indigenous yeasts.
